The menu draws influence from the traditions of Italian cuisine with a focus on Midwest ingredients and hospitality.

Influenced by the anthropology in the evolution of traditional and regional Italian cooking, Segnatore’s menu created by chef Matt Troost is rooted in tradition and flipped with a contemporary twist that is made to be approachable and communal dining focused. There is an emphasis on utilizing herbs and ingredients that are locally available. All bread and pasta served at Segnatore is made in-house.

The beverage program designed by Natalie Smythe follows Italian traditions of using what is local, naturally available, and provides a little something for everyone. There is thought and intention put behind every partnership and ingredient included on the menu; wine, spirits, beer and plenty of Italian non-alcoholic options, including coffee and tea, to satisfy all cravings.
